This sweet potato and kale hash with deer sausage is a nutrient-dense, one-pan meal perfect for breakfast or a hearty dinner. Venison sausage provides a flavorful protein that pairs naturally with the sweetness of the potatoes and the earthiness of the kale.
Ingredients
The Base
Venison Sausage: 1 lb (bulk pancake breakfast sausage or Farmstyle sausage).
Sweet Potatoes: 2 medium (peeled and diced into ½-inch cubes).
Kale: 1 bunch or 3–4 cups (stems removed and leaves chopped).
Aromatics: 1 small onion (diced) and 2–3 cloves garlic (minced).
Seasoning & Toppings
Spices: ½ tsp each of smoked paprika, and garlic powder.
Seasoning: Salt and freshly cracked black pepper to taste.
Optional: 4–6 eggs (to crack directly into the hash).
Preparation Steps
Brown the Sausage: Heat a large skillet (cast iron works best) over medium-high heat with a splash of oil. Add the venison sausage and cook until fully browned, breaking it into small crumbles with a spatula. Once cooked, remove the sausage and set it aside, leaving any drippings in the pan.
Cook the Sweet Potatoes: Toss in the sweet potato cubes and onion to the grease. Spread them in an even layer and cook undisturbed for 3–5 minutes to develop a crust. Stir and continue cooking for another 8–10 minutes, covering the pan for the last few minutes to help them soften until fork-tender.
Sauté Aromatics: Stir in the minced garlic and spices (paprika, garlic powder). Cook for 1 minute until fragrant.
Wilt the Kale: Add the chopped kale and return the cooked sausage to the pan. Stir frequently for 2–3 minutes until the kale is bright green and just wilted.
Finish with Eggs (Optional): Use a spoon to create small "wells" in the hash. Crack one egg into each well. Cover the skillet with a lid and cook for 3–5 minutes, or until the egg whites are set but the yolks are still runny.
Serve: Remove from heat and season with extra salt and pepper. Serve immediately, perhaps with a dash of hot sauce or sliced avocado.
